The Paleo diet


The paleodieta is a new diet that is actually the world's oldest  diet is the power that primitive man cave followed in the period before the discovery of agriculture occurred about 10,000 years ago. For about two million years the man was a hunter-gatherer and his livelihood was based on what he could find: fruit, berries and honey as a carbohydrate source, the need for fats and proteins was instead covered by seeds, nocispeci, caterpillars, snails, insects, eggs, fish, shellfish, especially the internal organs of animals and the brain more easily digestible than the raw meat of the muscles which, being very rich in connective tissue, were difficult to digest. Only with the use of fire, about 300,000 years ago, is best exploited the muscles of hunted animals could also roast the meat and legumes, made digestible by cooking. Nomads collect the food where it was also feeding on carrion, fishing and hunting also following the movements of animals. This lifestyle has shaped genetic selection for our forerunners for more than a million years, although it appears that the consumption of wild cereals among the populations of hunters and gatherers can be traced back to about 100,000 years ago. Infact, some archaeologists from the University of Calgary have recently found in a cave in Mozambique finds dating back to the beginning of the ice age that demonstrate the working of wild sorghum, the ancestor of the main cereal consumed today for food in sub-Saharan Africa . Then about 10,000 years ago with the discovery of agriculture man became more sedentary and has also started breeding animals, not only to eat them, but also to produce milk and its derivatives. With this change the diet was enriched with carbohydrates (mainly cereals) at the expense of proteins. Cereals, however, are not edible in a raw state and in need of cooking and yet remain more difficult to digest than foods that can be eaten raw. The introduction of cereals and this imbalance in the ratio carbohydrate / protein led to significant consequences in humans. In the Paleolithic the average height was as high as that which is currently achieved only instead of the average height of a Roman legionary soldier was around 165 cm. If we are athletes and we need more carbohydrates we can also introduce non-paleolithic food such as potatoes (alkaline) and if we introduce cereal is the best choice to the gluten-free cereals and low-glycemic index such as basmati rice, or the so-called pseudo -grains such as quinoa, amaranth, and buckwheat. Also consume sprouted grains and beans can be helpful. Doing so will greatly reduce the anti-nutrients present, in which case they become real vegetables rich in starch pre-digested and eliminated from the phytic acid, which counteracts the intestinal absorption of various minerals. Obviously should be removed even the coffee, salt and alcohol. Regarding the salt of the body needs sodium should be covered by the one contained in foods. Even milk and its derivatives shall be eliminated or at least limited and are obviously totally eliminate corn oils and seeds because they are too rich in Omega-6 fatty acids that have an inflammatory effect that is hydrogenated and trans fats found in margarine and many packaged products, which are very dangerous to your health. Unfortunately 55% of the Western diet is based on foods that our ancestors did not know, cereals, dairy products, prepared foods and processed meats, refined flour, sweeteners and hydrogenated fatty acids. The consequence of this new power "enriched" is premature aging with the increase of degenerative diseases, such as cardiovascular disease, cancer, arthritis, diabetes and obesity, and the latest addition, the "metabolic syndrome ".
Someone could argue that over time there were some genetic modifications that man would have adapted to the consumption of dairy products and cereals, but the prevalence of lactose intolerance to gluten that suggests the opposite. Suffice it to say that the appearance of Homo sapiens about 35,000 years ago, our genetic makeup has changed less than 1%. But if we want to be sure of what in our specific case is now available Nutrigenomics ie the possibility via a DNA test to identify the salivary biochemical nutritional genetic profile of the individual. But that's another story.

La paleodieta!


La paleodieta è una nuova dieta che in realtà è la dieta più antica del mondo ovverosia è l’alimentazione che l’uomo primitivo delle caverne seguiva nel periodo precedente la scoperta dell’agricoltura avvenuta circa 10.000 anni fa. Per circa due milioni di anni l’uomo era stato  cacciatore–raccoglitore ed il suo sostentamento era basato su quello che poteva trovare: frutta, bacche e miele come fonte di carboidrati, il fabbisogno di grassi e proteine era invece coperto da semi, nocispeci, bruchi, lumache, insetti, uova, pesce, crostacei, soprattutto gli organi interni degli animali e il cervello più facilmente digeribili rispetto alla carne cruda delle fasce muscolari che, essendo molto ricche di connettivo, erano difficilmente digeribili. Solo con l’uso del fuoco, circa 300.000 anni fa, si sfruttarono meglio i muscoli degli animali cacciati potendo arrostire la carne e anche i legumi, resi digeribili dalla cottura. L’uomo forzatamente nomade si sfamava raccogliendo il cibo dove lo trovava nutrendosi anche di carogne, pescando e cacciando seguendo anche gli spostamenti delle sue prede. Questo stile di vita ha plasmato per selezione genetica i nostri precursori per più di un milione di anni, anche se sembra che il consumo dei cereali selvatici tra le popolazioni di cacciatori e raccoglitori possa risalire a circa 100.000 anni fa. Infatti alcuni archeologi dell’Università di Calgary hanno recentemente trovato in una caverna in Mozambico reperti datati all’inizio dell’era glaciale che dimostrano la lavorazione del sorgo selvatico, antenato del principale cereale consumato tutt’oggi a scopo alimentare nell’Africa sub-sahariana. Poi circa 10.000 anni fa con la scoperta dell’agricoltura l’uomo è divenuto più stanziale e ha anche cominciato ad allevare gli animali, non solo per  nutrirsene, ma anche per produrre il latte ed i suoi derivati. Con questo cambiamento la dieta si è arricchita di carboidrati (soprattutto cereali)  a discapito  delle proteine. I cereali però non sono commestibili allo stato crudo e necessitano della cottura e nonostante ciò rimangono più difficilmente digeribili  rispetto agli alimenti che si possono consumare crudi. L’introduzione dei cereali e questo sbilanciamento nel rapporto carboidrati/proteine ha portato conseguenze notevoli sull’uomo. Nel Paleolitico l’altezza media era elevata come quella che si è raggiunta solo attualmente invece l’altezza media di un soldato legionario romano era intorno ai 165 cm. L’aspettativa di vita nel Neolitico era peggiorata in quanto gli uomini si ammalavano più facilmente. Quando i carboidrati sono in eccesso rispetto alle proteine si sviluppano nell’organismo resistenza insulinica ed infiammazione che sono alla base della maggior parte delle malattie croniche e degenerative. Per quanto riguarda il latte bisogna annotare che l’uomo  è l’unico animale che continua a nutrirsi con il latte anche dopo lo svezzamento e se per il neonato il latte materno è l’unico e il miglior nutrimento non lo è senz’altro il latte vaccino diverso nella composizione percentuale dei macro e micronutrienti. Per quanto riguarda la insostituibilità del latte e derivati come fonte di calcio (utile allo sviluppo di ossa e denti) si deve riconoscere che gli uomini del Paleolitico avevano le ossa e denti robusti e senza segni di osteoporosi come è evidenziato dai reperti fossili. Senza dubbio l’alimentazione ricca di frutta e verdure creava un ambiente alcalino con effetti protettivi per le ossa e la salute in genere, viceversa i cereali e latticini sono alimenti acidificanti che favoriscono così la perdita di calcio dalle ossa. Il calcio tra l’altro è presente in quantità considerevoli  anche in tutte le noci, i semi crudi e le verdure. Una delle critiche più comuni a questa dieta è che sia una dieta iperproteica; in realtà non è così in quanto i carboidrati  erano ben presenti, non sotto forma di cereali, bensì come frutta e verdure. Le percentuali non erano fisse ma potevano variare anche in conseguenza della disponibilità del cibo e a secondo del clima e delle stagioni. Viene indicato un range nel quale: i carboidrati vanno dal 20% al 40 %, le proteine dal 20% al 35%  e i grassi dal 30% al 60%. Quindi poteva essere se mai, in certi momenti, una dieta iperlipidica. Però bisogna considerare che i grassi erano per lo più salutari cioè prevalentemente dal pesce e dalla frutta secca e anche i grassi provenienti dal cervello e dalle carni della selvaggina erano particolarmente ricchi di Omega 3. Il cervello per la sua struttura lipidica e le carni perché di animali che si nutrivano prevalentemente di erba fresca cioè pascolavano e non erano stabulati e alimentati con foraggi come negli allevamenti. Senza dubbio un limite di questa dieta è la scarsa praticità e organoletticità. Non è che noi possiamo facilmente abituarci a mangiare cervelli, vermi e bacche però potremmo attuare alcuni  accorgimenti  utili per la nostra salute: cominciando a fare tanti piccoli pasti invece di pochi ed abbondanti,  si riduce così la stimolazione insulinica; limitando il consumo dei cereali 2 volte a settimana. Se siamo degli sportivi e abbiamo bisogno di più carboidrati possiamo introdurre anche degli alimenti non paleolitici come le patate (alcalinizzanti) e se  introduciamo dei cereali la scelta migliore è verso i cereali senza glutine e a basso indice glicemico come il riso basmati, oppure i  cosiddetti pseudo-cereali come quinoa, amaranto, e grano saraceno. Anche consumare i cereali e legumi germogliati può essere utile. Cosi facendo si riducono notevolmente gli antinutrienti presenti; in questo caso diventano vere e proprie verdure ricche in amido predigerito e viene eliminato l’acido fitico, che contrasta l’assorbimento intestinale di vari minerali. Ovviamente andrebbero eliminati anche il caffé, sale e alcolici. Per quanto riguarda il sale il fabbisogno corporeo di sodio dovrebbe essere coperto da quello contenuto nei cibi. E per quanto riguarda l’alcol qualcuno sostiene che forse anche l’uomo del paleolitico occasionalmente poteva  nutrirsi  di frutta fermentata. Quindi anche per noi l’eventuale consumo di alcol deve essere solo occasionale. Anche il latte e suoi derivati vanno eliminati o almeno limitati e ovviamente  sono totalmente  da eliminare gli oli di mais e di semi perchè troppo ricchi di acidi grassi Omega6 che hanno  un effetto infiammatorio e i grassi trans cioè  idrogenati presenti nelle margarine e in vari prodotti confezionati, che sono molto pericolosi per la salute. Purtroppo il 55% della dieta occidentale si basa su alimenti che i nostri antenati non conoscevano, cereali, latticini, cibi preparati e lavorati, insaccati, farina raffinata, dolcificanti e acidi grassi idrogenati. La conseguenza di questa nuova alimentazione “arricchita” è l’invecchiamento precoce con l’aumento delle malattie degenerative, come le patologie cardiovascolari,  i tumori, l’artrite, il diabete e l’obesità e l’ultima arrivata, la “sindrome metabolica”. 

Si potrebbe obiettare che nel corso del tempo ci siano state delle modificazioni  genetiche per cui l’uomo si sarebbe adattato al consumo di latticini e cereali, però la grande diffusione di intolleranze al lattosio e al glutine fa sospettare il contrario. Basti dire che dalla comparsa dell’Homo Sapiens,circa 35.000 anni fa, il nostro patrimonio genetico è mutato meno dell’1%. Ma se vogliamo essere sicuri di ciò nel nostro specifico caso ora è disponibile la Nutrigenomica cioè la possibilità  tramite un esame del  DNA salivare di individuare  il profilo biochimico nutrizionale genetico del singolo individuo. Ma questa è un’altra storia.
